We’re all familiar with the classic BLT—bacon, lettuce, tomato, and mayo.

The protopantry actually contains the ingredients for homemade mayonnaise (I like this recipe). But, I’ve heard grumbling that *some* of y’all don’t like mayo anyway :)

This BLT recipe is totally painless, and brings a fresh taste of summer to the cold, gray days of winter. Plus, it’s quick enough to make in the morning before work—absolutely no chopping required.

Yield: 1 serving, doubles easily

Time: 10-15 minutes

Ingredients

  • 1-2 tablespoons olive oil

  • 1-2 cloves garlic, minced (we used pre-minced)

  • 1/2 cup canned diced tomatoes, well-drained

  • 2 slices bread, toasted (use any type you like for sandwiches, including gluten-free if needed)

  • 1 handful salad greens or spinach (we used arugula)

  • 3 slices bacon

  • Pepper to taste 

Instructions

  1. Cook the bacon in a skillet or in the microwave. Cook the bacon in the microwave by placing it on a microwave-safe dish between four sheets of paper towel (two sheets beneath the bacon and two above). Microwave on high for four-six minutes, checking bacon every 30 seconds after four minutes for doneness.

  2. While the bacon cooks, combine the oil, diced tomatoes, pepper, and garlic in a small bowl.

  3. Assemble the sandwich by placing salad greens, tomato mixture, and slices of bacon on toasted bread.

  4. Cut the sandwich in half or as desired and serve.
